Why is my oven smoking (and does it matter)?

Burnt-on grease is the usual cause: fat on the element, walls or floor smokes every time the oven reheats it. New ovens smoke briefly while factory coatings burn off. Persistent smoke matters: around 60% of home fires start in the kitchen.

The likely causes, ranked

We open smoking ovens across London every week; the cause is usually obvious within a minute. In rough order of how often we find it:

Carbonised grease on the element, walls or floor
Splattered fat bakes into a black crust over months. Each heat-up chars the surface of that crust again and vents smoke into the kitchen, so gradually that many people only notice once the smoke alarm joins in.
A recent spill re-burning
Cheese off a pizza, fat from a roasting tin, a crumble that bubbled over. One spill on the oven floor smokes hard for two or three uses, then quietens down and joins the crust.
A new oven burning off coatings and packaging
Bare metal leaves the factory with a thin protective oil film, and insulation binders cure the first time they get hot. Tape, film or polystyrene left inside does the same, more dramatically. Normal for the first use or two.
A faulty element
The rare one. A grill or fan element with a split outer sheath can smoke from a single spot and smell sharply metallic. If a clean element smokes or sparks, switch off at the wall and book an appliance engineer, not a cleaner.

What the smell of old fat does to your food

Old fat never smells neutral.

Fat that has burnt and cooled dozens of times turns acrid, and its smoke carries that flavour onto whatever is cooking. Bread and cakes take it worst because they spend the whole bake absorbing the cavity air. Customers describe the result as bitter, stale or "like the last roast", and no extractor fan fixes it while the source stays baked to the floor.

If the kitchen smells of a dinner you cooked three weeks ago before tonight's has gone in, the oven is seasoning your food with old fat.

When smoke means fire risk

Most smoking ovens are a nuisance rather than a danger, but the gap is smaller than people assume. London Fire Brigade advice is blunt about it: accumulated fat and grease "can ignite and cause a fire", and the brigade asks households to clean the oven, hob, extractor fan and grill regularly. Around 60% of fires in the home start in the kitchen.

A fat layer that only smokes at roasting temperatures can catch when a grill element takes the surface hotter still, and the pattern customers describe before a flare-up is nearly always the same one: months of light smoke that everyone had got used to, then one long high-heat grill session too many.

New ovens smoke on first use

A brand new oven that smokes and smells of hot oil or plastic on its first run is behaving normally, and manufacturers expect it. Bosch's manual for a current built-in oven says: remove leftover packaging such as polystyrene pellets, wipe the surfaces with a damp cloth, then heat the empty oven at maximum for an hour with the room ventilated, before any food goes in.

Do not cook during the burn-in; food absorbs those first fumes just as readily as old fat smoke. If a new oven still smokes after its third run, look for hidden protective film or a spill made during installation before assuming a fault.

Checks you can do today

Spend ten minutes with the oven cold before booking anyone. A torch on the floor, the roof around the grill element and the bottom edge of the door glass usually finds the source.

Common questions

Is a smoking oven dangerous?

Light smoke from old grease is a nuisance first and a warning second; the risk turns real once the fat layer is thick enough to catch. Treat thick smoke, scorching around the door or any flame as a stop-now problem: door shut, off at the wall, 999 if it spreads.

Why is my new oven smoking?

Protective oils on new metal and curing insulation burn off during the first use or two, and packaging left inside adds to it. Run the manufacturer's burn-in: empty oven, maximum temperature, about an hour, windows open. If it still smokes after three runs, check for leftover film or an installation spill.

Why does my oven only smoke when the grill is on?

The grill element collects a direct film of fat because it sits right above the food, and it runs hotter than a bake, so the film burns off at the start of every session. Cleaning the element area and oven roof usually ends it.

Will the smoke stop on its own?

A fresh spill mostly burns itself out over two or three uses, tainting your food while it does. A carbonised layer will not, because each hot run chars the surface again. The smoke stops when the fat is removed, not before.
