High Barnet is an old market town, and the High Street still runs straight up to Hadley Green, where a row of Georgian houses lines the common. That top end is where the range cookers and the occasional AGA live. How the dip-tank clean works
The racks, shelves, trays and side runners come out and go into a heated tank in the van, which is where the baked-on grease shifts. The cavity, the fan cover and the door glass are degreased by hand indoors with non-caustic products, so the kitchen does not reek of chemicals after we go, and where the door design allows we split it to reach the film between the panes. Every oven is heat-tested and signed off before we leave.
Working in the conservation streets
